Why do The Diplomat steaks taste better than the ones I cook at home?
It has to do with the grade of beef and the number of days the meat has been aged. Grocery stores typically age their meat 10 days while THE DIPLOMAT steaks are aged a minimum of 42 in our cold meat lockers. During the ageing process, the natural enzymes in the meat continue to break down the connective tissues to further tenderize the meat.
The other factor is the grade of beef we buy.
Our Chefs only Hand-Cuts Specially Selected AAA Angus. This is specially picked for THE DIPLOMAT to ensure top quality. The beef you buy in the grocery store will generally be at least two-three grades lower.
